Masoor Dal (Red Lentil Curry)
Ingredients
- 1 cup red lentils (masoor dal)
- 3 cups water
- 1 medium onion, finely chopped
- 2 tomatoes, diced
- 1 tsp turmeric powder
- 1 tsp cumin seeds
- 2 cloves garlic, minced
- 1 tbsp vegetable oil
- Salt to taste
Cooking Time
- Preparation: 10 minutes
- Cooking: 25 minutes
- Total: 35 minutes
How to Cook
- Rinse lentils thoroughly and set aside.
- In a pot, heat oil, add cumin seeds, onion, and garlic. Sauté until golden.
- Add tomatoes, turmeric, and cook for 3–4 minutes.
- Stir in lentils and water, bring to a boil, then simmer until soft.
- Season with salt and serve with rice or roti.

Palak Paneer (Spinach with Cottage Cheese)
Ingredients
- 200g paneer (cottage cheese), cubed
- 4 cups fresh spinach leaves
- 1 medium onion, chopped
- 2 tomatoes, chopped
- 1 tsp ginger-garlic paste
- 1 tsp garam masala
- 2 tbsp oil
- Salt to taste
Cooking Time
- Preparation: 15 minutes
- Cooking: 20 minutes
- Total: 35 minutes
How to Cook
- Blanch spinach in hot water for 2 minutes, then blend into a puree.
- Heat oil in a pan, sauté onions until golden, add ginger-garlic paste and tomatoes.
- Add garam masala and spinach puree, cook for 5 minutes.
- Gently stir in paneer cubes, simmer for another 5 minutes.
- Serve hot with naan or rice.

Vegetable Upma (Semolina Breakfast Dish)
Ingredients
- 1 cup semolina (sooji/rava)
- 2 cups water
- 1 small onion, chopped
- 1 carrot, diced
- 1 green chili, chopped
- 1 tsp mustard seeds
- 1 tsp urad dal (split black gram)
- 2 tbsp oil or ghee
- Salt to taste
Cooking Time
- Preparation: 10 minutes
- Cooking: 15 minutes
- Total: 25 minutes
How to Cook
- Dry roast semolina in a pan until lightly golden, set aside.
- In another pan, heat oil, add mustard seeds, urad dal, and sauté until fragrant.
- Add onion, carrot, green chili, and cook until vegetables are soft.
- Pour in water and salt, bring to a boil.
- Gradually stir in roasted semolina, cooking until thick and fluffy.
- Serve warm, optionally with coconut chutney.
